Basa

Basa is a traditional way of preparing fresh soft cheese made from sheep’s, cow’s or mixed milk in the region of Lika. From the countless number of different methods of preparation, which differ from village to village, particularly valued is the method from the surroundings of Otočac where the fresh milk is sieved through a gauze, boiled, cooled, and sour milk is added; the mixture is kept warm until it clots, and then cooled so that it thickens. At the end cream is added to the mixture. Basa is usually served with polenta, whilst the best polenta is that which is prepared over a mild heat and constantly stirred for at least two hours.
